BEEF TOURNEDOS, CRANBERRY AND PEPPER SAUCE

Ingredients

  • 4 Dalisa beef tournedos 
  • 2 tbsp. butter 
  • 2 tbsp. 5-color peppercorns 
  • 1 cup fresh cranberries 
  • 1/2 cup red wine vinegar 
  • 2 tbsp. beef bouillon concentrate (Bovril type) 
  • 2 tsp. cornstarch 
  • 2 cups water 

Steps

  1. In an ovenproof skillet, melt butter over medium-high heat. Sear tournedos for 2 minutes on each side. Set aside on a plate. 
  2. In the same skillet over medium heat, add peppercorns, cranberries, wine vinegar and beef concentrate. Simmer for 3 minutes. 
  3. In a small bowl, mix cornstarch with water. Add to pan, stir well and let thicken for 2 minutes. 
  4. Return the beef tournedos to the pan and cook in the oven at 375°F for about 15 minutes, until rare. 
  5. Serve with mashed potatoes and sautéed French beans.
