BEEF TOURNEDOS, CRANBERRY AND PEPPER SAUCE

Ingredients
- 4 Dalisa beef tournedos
- 2 tbsp. butter
- 2 tbsp. 5-color peppercorns
- 1 cup fresh cranberries
- 1/2 cup red wine vinegar
- 2 tbsp. beef bouillon concentrate (Bovril type)
- 2 tsp. cornstarch
- 2 cups water
Steps
- In an ovenproof skillet, melt butter over medium-high heat. Sear tournedos for 2 minutes on each side. Set aside on a plate.
- In the same skillet over medium heat, add peppercorns, cranberries, wine vinegar and beef concentrate. Simmer for 3 minutes.
- In a small bowl, mix cornstarch with water. Add to pan, stir well and let thicken for 2 minutes.
- Return the beef tournedos to the pan and cook in the oven at 375°F for about 15 minutes, until rare.
- Serve with mashed potatoes and sautéed French beans.
